Celebrate St Patricks Day in style with these delicious Lime Margarita Cupcakes!! Moist, buttery cupcakes topped with a delectable lime buttercream frosting with a hint of tequila.
Who doesn’t love a good margarita? These cupcakes can be infused with a bit of Tequila for an extra kick of flavor if you’d like! Bake the cupcakes as directed, let them cool completely. Using a kebab skewer, poke 6-8 holes in the top of the cake. Drizzle one teaspoon of tequila into the holes. Frost and serve.
Margarita Cupcakes
You’ll Need:
2 teaspoons lime zest
2 TBS freshly squeezed lime juice (from about 1 medium lime)
1 1/8th cups cake flour (not self-rising)
3/4 cups all-purpose flour
2 teaspoons baking powder
3/4 teaspoons salt
1/4 teaspoon baking soda
1/2 cup buttermilk
1/2 cup (1 stick) butter, at room temperature
1 1/8th cups sugar
3 eggs
Combine all the dry ingredients together, using a hand mixer or electric mixer. Add the butter and mix until coarse. Add the buttermilk, eggs, lime juice and zest, mixing until smooth and creamy. Pour the batter into prepared muffin tins (either lined or lightly sprayed with non-stick cooking spray.
Bake 18-20 minutes at 350F, when cupcakes are done, remove from oven and cool completely before frosting.
While the cupcakes are baking, prepare the Tequila Lime Buttercream Frosting!
Tequila Lime Buttercream Frosting
1 1/2 teaspoons of lime zest (about 1 medium lime)
3 tablespoons freshly squeezed lime juice
1 1/2 cups (3 sticks) butter, at room temperature
3 cups confectioners’ sugar, sifted
3 tablespoons tequila
1 teaspoon lime oil
1/4 cup sour cream
In a medium bowl combine butter, half the confectioners sugar, lime juice, lime oil, and sour cream, mixing until smooth. Beat in the remaining confectioners’ sugar and lime zest until light and fluffy.
Frost the cooled cupcakes and sprinkle lightly with additional Lime zest and a small wedge of lime on top for decoration.
